The use of  Achiote as  a  food colouring was originated in South America and Central America, where the essentials took orange colours  because of the seeds of Achiote.

Due to several carotein  compounds, mainly apocaroteins, the seed of Achiote is red. The bixina is quoted  as the most important compound. The bixina is a crystalline dark substance, soluble with alcohol and oils, and insoluble with water.

Properties and Uses:

Textile Industry: Used as a tint.

Medicinal Uses: Use as an anti-inflammatory and antimicrobial.

Nourishing Industry: It is used as a tint in confectionery, soups, sauces, cheeses.
